My current card is only 2GB, but I intend to upgrade and I wonder if I'd be better skipping the first one for the 2nd and 3rd games instead.

Do you actually mean Settlers 1 - i.e. the first one released in '93? I don't think GoG sell that one, so maybe the Ubisoft webpage will give you specifics on how to run it. Maybe you'll need DosBox, too.
