I tried running The 11th Hour under macOS High Sierra, but the game wouldn't start: I could switch to it with Cmd-Tab, and it was visible in the docker, but it didn't open any window. I'm posting the solution I found in the hope that it helps someone else.

After some digging, it turned out that this is a known issue with Wineskin: wineskin.urgesoftware.com/tiki-view_blog_post.php?postId=87

To fix this for The 11th Hour as installed from GOG, open the terminal and type:

open '/Applications/The 11th Hour.app//Contents/Resources/game/11th Hour.app/Wineskin.app'

This gives you a "Wineskin" window with a few buttons. Click "Set Screen Options", uncheck "Auto Detect GPU Info for Direct3D", and then click "Done" and "Quit". After that, you should be able to start the game normally.
I tried following the steps below, but it looks like they've stripped wineskin.app out of the Package. :(
