System Shock 2:

From the Game Page:

Please note: This game currently does not support macOS 10.13 High Sierra.
So no hope there, they are already aware it doesn't run.

Hotline Miami:

From the Game Page:

SYSTEM REQUIREMENTS
Minimum system requirements - Mac: OS X 10.7 or later,
Processor: Intel Core 2 Duo 2.8 GHz+,
Memory: 2 GB of RAM,
Hard drive space: 130 MB,
Graphics: 1 GB of video memory.

OS X 10.12 compatibility notice: The OS X version of Hotline Miami requires the latest version of XQuartz to be installed in order to play the game.
So as long as your computer meets those specs, you should put in a support ticket to GOG. https://support.gog.com/hc

In addition, if you recently purchased HM it should fall under the Money Back Guarantee Policy.

If, within 30 days after the purchase of your game, you experience technical problems or game-breaking bugs that prevent you from finishing your game, contact our customer support. They will do their best to help you fix the problem and if, at the end of their attempts to solve the problem your game is still not working, we'll give you back your money.
SS2 is a special case, because it does say on the gamepage that it doesn't run on macOS 10.13, but because 10.13 is so new if you purchased it recently I would still contact GOG support and ask for a refund.

To run System Shock 2 you have to disable Wineskin's D3D GPU detection, which doesn't work with High Sierra yet...

- hold down the alt-key while double-clicking on System Shock 2 in the Finder
(this will open SS2's Wineskin settings)
- choose Set Screen Options
- uncheck Auto Detect GPU Info for Direct3D
- press Done and then Quit

Now you should be able to launch System Shock 2 normally.
