It's May 30th, why do I have to wait 13 hours before I can play the game? Didn't say anything on the store page about it being released night to the 31st.

Yes, not a GOG problem, it's da decission by the devs or publishers. They will even only release the Kickstarter backer keys for Steam and GOG at the hour of the launch.
