Will Subwar 2050, through DOSBox, be able to detect and work with a 360 Controller on Windows 7?

Will it detect, sure. No problem.

Will it work? Sure.

Would it be optimal? Not at all. Subwar has more controls than the 360 controller has to offer.

Do you know if the controller keys can be remapped in the game by any chance?

Try Ctrl-F1 or you could use something like JoyToKey.
Honestly though, M$'s Xbox controller support on PC sucks, if you buy a gamepad from Logitech you get software that lets you configure all this and more.
