I actually figured it out myself, based on this Youtube video from Tom's Tutorials:

(Updated) How to MANUALLY install Stellaris mods v2.5+

Basically, in Finder, you go to /Users/(Your Username)/Documents/Paradox Interactive/Stellaris/

and create a directory called "mod."

Then, you copy the numbered mod directory AND its companion .mod file into the mod directory you just created.

Next, you open the .mod file with TextEdit, and change the line that starts with "path," so that it reads

path="mod/(the number of the mod directory)"

Then, you save and close the opened .mod file.

Finally, you enable the mod in the launcher, and you're good to go.

Please note: I've found that the game doesn't seem to like using old mods; if anyone knows how to force the game to accept old mods, please respond to this post.
