I'm playing this on my laptop which has a 1920x1080 display built in, but I'd like to play the game on my externally connected 30" monitor instead. Is there a way to override which monitor the game will use?

Well, there's this, but it relies on the application being able to run in a window. You'r best be, as with the other question you posted, is probably to run the game via ScummVM.
