This seems to be an odd problem. I've been playing X-wing for a bit ('98 version) and it's all working fine. In the sale I grabbed XvT, and loaded it up to try it out.
I loaded the first rebel campaign mission, all seems good (didn't try 3d acceleration) until after about 10-15 seconds, the sound stuttered briefly and the game refused to accept keyboard commands. The joystick (saitek X-52pro) still worked fine.
Ctrl+alt+del worked, but clicking task manager just brought the game back, so I had to select log out to do anything.
Alt+tab didn't work, esc didn't work, etc.

Any ideas? I tried setting it to Windows XP(sp3) compatibility, but no luck. I'm running windows 7.

Haven't had this happen, but the sound stutter seems typical to issues with multicore CPUs.
The dll that fixes 3D mode also pins the game to a single CPU and MIGHT solve it (there are also lots of other ways to do that).

If you try a few times, including a few alt+tab etc. you should be able to get to the task manager in the end.
At least it works for me. Just the first time tends to fail.

alt+tab doesn't work because GOG disabled it in the compatibility profile. I don't really know the reason, it worked for me without the profile but I haven't tested it much (https://sourceforge.net/p/xwahacker/code/ci/master/tree/xvt_enable_alttab.reg is what I used to remove it)

In my experience, never ever modify the compatibility setting manually, it breaks the "magic" GOG added.
I am having no such issues (also Win7, but a logitech extreme 3d pro joystick), but I always use my dll to fix 3D hardware mode of course ( https://github.com/rdoeffinger/xwa_ddraw_d3d11/releases/latest ).
It seems that the 3d dll solved this problem as well, thanks!
