Any way to do this? i.e. The farther you move your mouse from the center of the screen, the harder you turn in that direction.

Not that i know of... turn rate is based on mouse movement speed, which makes it quite a challenge to stay on the tail of a hard turning opponent, but on the bright side gets you very precise aiming.
Still, even if I managed to finish the game once with the mouse only, joistick controls are overall much better.

Keep in mind that slowing down at 33% thrust gets you the better turn rate regardeless of which control method you use

I remember playing this in the day, and having to constantly move mouse and raise and move, and raise and move, and raise and move....

If you find a solution, share!
You could try using mouse joystick emulation. Here's a link to an article with some advice and suggestions: http://www.makeuseof.com/tag/turn-your-mouse-into-a-joystick-for-pc-gaming/

I haven't tried that myself though. You probably can't see the mouse cursor if you do this and if the emulators don't include option for automatic centering then flying straight will be an issue. It could also be hard to prevent the game from taking input from the mouse movement itself although that might be possible from dosbox settings.

I'd recommend getting Logitech extreme 3D pro for 35$ or something similar :), much less trouble and better experience at any flying game.
I don't think it is possible. Back when this was released, joysticks were pretty common and cheap. I don't think I even knew anyone with a computer and not a joystick back then, haha.

I'm trying the joystick emulation tonight. Thanks for the tip! I work on the road over 200 days a year (read: airline), and packing a full joystick is not in the cards, unless I can find something smaller (game pads need not apply).
