I can't figure out what the keyboard command to start the flight recorder is. Does anybody know what it is?

Shift-F to start/stop it, if I remember correctly.

EDIT: Welp, doesn't seems to work.

It appears so. "Shift-F" was the command to start/stop, but the "rec" doesn't show up in the HUD, and it doesn't ask you to name the file when the recording stops. If I remember correctly, this was also an issue with the original release of the game, so hopefully they'll patch it.
This is a very old thread but the only one I could find on the flight recorder.

I think people should know that there is a working solution.

Create a folder named "FILM" in the path where you installed XWA. Then pressing "Shift-F" will work - REC shows up and you can name the recording, afterwards.
