There doesn't seem to be a 1920x1080 option in the game menu. The highest i can go is 1680x1050. Is there any fix for this?

Yes - using the Jedi Knight / MotS Hardware Acceleration Graphic Patches (the modified exe provided with jkultimate15.zip) I've managed to up my resolution to 1920x1080.
