On the GOG.com Game page is written, that it also has German in audio and text form. The installer is only in English and I cannot find a selection to change the language. What made I wrong?

In the start menu of your computer, search for the Star Wars Battlefront folder (it can be under the GOG folder but it's not the case for me).
In it, you should find a shortcut named "Language Settings". Click on it, choose your language and save.
Then, you'll have to launch the game with the shortcut located inside the start menu folder, otherwise only the audio will be translated but not the texts or videos.
