This is a good start. 25th Anniversary and Judgement Rites were very episodic and felt like you were actually in the show. It even had the old post-epsoide banter between the troika that always seemed to occur with the humorous music, and spock raising an eyebrow to the laughter of the rest of the crew.

Bought the other one because hey it's 6 bucks.
Loved these games, course when they first came out they were good graphics for a Star Trek Game. Rebel Universe was probably the first to use EGA graphics, These 2 games were a step beyond. 25th Annivesary i remember opening the box and loving it after i installed and ran it for the first time. I think i had a SVGA monitor when it came out. Still i'm a fan of most Star Trek games, I just wish they could have made more this past decade or more. STTNG: A Final Unity was the last good Star Trek game i have played.
