I keep getting a message that my graphics card is not sufficient even though it is WAY more than enough.

I ran CoP under Wine 3.0 without any funny stuff such as winetricks or Play on Linux. Also without a fancy GPU, just integrated graphics. There is a weird performance problem that appeared at some point after Wine 3.0. Anyway, if you can't get it to work with Play on Linux, maybe try without.
