Were you ever able to find a solution to this problem? None of the STALKER games are recording play time for me either. Has anyone else run into this before?

I've contacted support on the issue and was asked to send them my log files located in "C:\ProgramData\GOG.com\Galaxy\logs". Hopefully I will hear back from them soon and will post what they tell me.
Galaxy launches the Stalker games through shortcuts for some reason. I think that causes Galaxy to not record playtime properly.

You can make Galaxy launch the games directly by fiddling with the goggame-<gameId>.info files.

If you want GOG Galaxy to track play time run STALKER from setting button. More/Settings/Save and launch. It works fine for me.
