I know that Simon 1 and 2 were on GOG before, but will buying the new editions get you the old ones as well? Like BloodRayne Terminal Cut, for example?

Yes, you get the originals (Legacy versions) as part of the extra goodies.

I don't have the remaster edition myself, but for other games the "legacy" file appears as a goodie (on the right column in the download page).
