Like most anything made Pre 2005, there's a lot more work to be done.

In the meantime, this might do the trick.
Only vanilla SimCity 3000 was ever released for the Mac. Unlimited wasn't.

As was just said above, SimCity 3000 came out for mac. SimCity World/UK/EU/What have you did not.

This complicates things slightly.
Just use porting kit. Version 3.0 is out, supporting Catalina
I just got it to work using Porting Kit, very happy about that.
But... Does anyone know how I change the in-game language?
When I used winebottle I could get it to launch a separate language options window (that's in-game), but not sure how to do that in Porting Kit. (I couldn't get winebottle to work with launching the game that's why)

----

I tried opening the "Language setup.exe" file with Porting Kit, but it doesn't save my preference; and doesn't change anything in-game.

in porting kit you can start the language exe with wineskin in advanced tools
