I just got the game, and while I haven't played it yet, it isn't something I saw in the main menus. When I have time to play it tonight (at the time of posting this) I'd like to know how to access these features.

Those modes (along with a gender-swap mode) haven't been released yet.

They'll eventually be released as free updates, but I'm not sure on the dates, or even if they've revealed the release dates.
