Hi, I actually tried to find out about this online and it seems they removed the Unity user tracking from the Steam release as of 23 November 2021. All Steam builds (Windows / macOS / Linux) have the tracking (analytics) removed.

With the GOG release, they have different builds and the latest build (1.0.09) is from 19 March 2021. Unfortunately, it appears they've never updated the GOG release to patch out the user tracking as the latest GOG build still contains Unity.Analytics.Tracker.dll and Unity.Analytics.StandardEvents.dll (both of which were removed in the latest Steam build).

Shing! was updated to version 2.0 on Steam just last month, so I posted in the Steam forum about a possible GOG update, and the developer said that a GOG update is coming soon.
