Just for a heads-up: while the in-game option only supports a restrictive set of resolutions there is an easy manual fix for that. Go to 'C:\Users\(your username)\AppData\Roaming\Atari\RCT3\' and open the Options document via Notepad or equivalent.

The resolution config is right at the start, so set it to whatever feels good for you, and the game will launch accordingly. As you might notice, if your resolution is quite high like 1080P or higher it may be counter-effective as the UI doesn't scale with said resolutions, so you might want to experiment with what works well for you. Squinting at teeny tiny boxes and check-marks is never fun.
