After posting not only here, but on the Steam forums and twice on the Discord server of the game, I finally managed to get an answer from a dev on Discord:
Sorry for the lack of response
Yes achievements arent available on GOG
We'll see what can be done about this
After that answer, I tried to ask about a possible ETA and/or the possibility that the GOG version may end up with no achievements at all, but got no answer to the follow-up questions.
