When I click the options menu, I cannot change the graphic resolution.
My card is a Geforce740m, I know that game was made for Windows 95 and use DirectX 7.
What program do you use to change the video option?
You can only access the graphic options in non-3Dfx versions. Thus it is disabled in the GOG release as it's the 3Dfx version.

You would only have had the options up to 800x600, not like any resolution as in modern games.

I'm not sure how the GOG version is emulating graphics (with nGlide?), but by setting "DisplayMode=6" in the Ubi.ini file, you can run the game at internal native 800x600, the maximum resolution supported by the game. I heard it somehow doesn't work with the GOG release, but you can fix that with nico's PodHacks.

Note that it will cull far away polygons quite early in that resolution which can be workarounded by toggling through the resolutions in-game with Shift+F7. However, it doesn't go back to 800x600 when toggling through it in most versions (as it's missing simulated video memory it seems) and only go back up to 640x480 unless you patch the executable (to ignore that memory limit).

If you can use nGlide itself, you should select your native desktop resolution in the nGlide configuration. Thus it'll effectively run at 1920x1080 or whatever you choose, just with the UI scaled up (and polygons wobbling around a bit due to the low floating point precision (?) in old games).

Btw, Pod doesn't use DirectX7 / Direct3D, it didn't use Direct3D at all in the first releases.
Instead, it used graphic card manufacturer APIs, like 3Dfx for 3Dfx cards, whose are emulated in the GOG release (through nGlide?), converting it to Direct3D9.
There was a DirectX 5 (or even lower, I don't recall) patch later on but it seems quite borked on todays systems.
