I had a little problem getting the info, but FYI here's how you do it for POE2:Deadfire:
1. Go into the Applications/Pillars of Eternity II Deadfire/
2. Right click on the executable file and select Show Package Contents
3. In the Contents folder, create a new "override" folder
4. Put your mods (in their own respect folders) into this override folder
Done.
