Like games on Steam, GOG Galaxy opens when I launch Pillars of Eternity.
So, I must have Galaxy open to play PoE?

You are launching it through a Galaxy shortcut no doubt. You do not need to have Galaxy running. Create a shortcut to the PillarsOfEternity.exe file from your installation folder.
