If i buy this on GOG can i play multiplayer? also would I be able to share this with my sister and play NMS with her? Been desperate for a multiplayer game to play since she moved 300 miles away :(

Both of you would have to enable the beta testing in the left panel in Galaxy (Settings > Test upcoming features in GOG Galaxy public betas) and then in the right panel select the multiplayer option (More > Settings > Channel > experimental beta). This also assumes that you both are using the GOG Galaxy client to run the game.

EDIT: After doing this then both of you will need to adjust the options to prevent someone else from getting into your game and destroying things or killing players.

Be aware there is no crossplay, so while you can enable multiplayer, you can only play with other players that have the GOG version (no crossplay with Steam, XBOX, or PS4).
