how is the multiplayer experience between gog and steam users?

Multiplayer works only if you use GOG Galaxy, not if you use the offline installers.
And Steam gets faster updates, so it might be the case that you need to wait from some hours up to several days until you can Crossplay with your friends again.
However you still can play with others that use the same version.

I've heard you can export your save game file from GOG to Steam... haven't tried it yet but people are reporting that it works.
