In Baldurs Gate 1 and Icewind Dale 1, there are some beastly badasses you go against. Sarevok's was more dangerous but the dude in IWDale was still tough.

Doesnt any of the other games have bosses with at least half a nut sack. The spellcaster fights are ok but unpredictable. The warriors you are either dead or you win maybe. Its more enjoyable.
Does neverwinter nights have a module with a boss like what I am thinking. The spellcaster fights dont really try anything new. The slith king in Avernum was cool but you get to face Grah Hoth who was a complete whore to face.

Tough one to answer as one man's boss is another man's pushover. Anyway, if memory serves, the boss battle at the end of Against the Cult of the Reptile God was pretty good. And I think the battle at the end of Bonds of Blood was good as well, although it's been so long that I'm a bit hazy on it.

If you're looking for a challenge, try the server I used to play: World of Greyhawk. Link to the server location info and link to the rules and changes [url=http://worldofgreyhawk.fr.yuku.com/forums/1/Rules-and-announcements/Rules-and-announcements#.UzSFo87xTE0]Here. I know it's a pain in the ass to go through rule changes for specific servers, but most apply to spellcasting classes. I found the server fun, well laid out, and there were some brutally tough bosses as well as some pretty badass areas. No need to party up if you prefer going solo (but of course that increases the difficulty). Well worth taking a look at. I played there for over 2 years.

Hazy memory, but If you saved up a lot of the bolt/arrow of biting (or explosive ones) in BG1, you could send one meat dummy out to hold off Sarevok, and pelt him with those powerful arrows. Sure, you'd probably lose the meat-dummy, but the arrows would take him down quickly. (and mostly keep you out of magic range, and you don't trip all the @!#$% traps in his lair).

So again, pushover vs tough fight, depends on strategy.
