EDIT: Solved, see #4 below

The GOG-provided manuals have 2 pages on each page (in the PDF), which is slightly inconvenient when viewing them on a 6" e-reader (ex: the Kindle). Would anyone happen to have a single-paged version of the manuals? Failing that, does anyone have the tools to do the job by hand?

I must admit that I thought the same thing the other day, it'd be really handy to have a game manual on my kindle and be able to quickly look stuff up that way
netbooks are actually very useful for that. I have my real laptop in front of me running a game, and I can have my netbook off to the side with the manual, or other relevant documents, open.
Here we go. Found a tool called BRISS that can split the pages.

True but they chew through power a LOT faster than a kindle (granted you have to have a kindle to get this benefit but still...)
Ipads are also really good for this kind of use also the Ipad can be rotated either portrait or landscape depending on what is needed for a certain Manual. Also the Zoom feature is a Godsend for enlarging small Manual Screenshot photos....
I have an Asus Eee Netvertible that converts to a tablet PC, I love it just for reading stuff and using my touchscreen to scroll and zoom.
