I've never liked four person parties in my D&D groups, and while Storm of Zehir offers you two NPC companions, I'd rather decide what classes the characters are to buff my main team. However, all of the guides I have found for modifying the party size are for the non-GOG version of the game.

Has anyone modded the party size, and how did you do it?

The GoG version is the same game. Any of the console commands/cheats/haks work just as for the disk version of the game..

Though I didn't increase the party size. The game was easy enough with the standard limits.
I believe you can increase the party size by 1 more if you take the Leadership feat. But you can change the SoZ player-created party limit to whatever you want by opening the toolset, opening the Campaign Editor in the Plugins menu, selecting "Neverwinter Nights 2 Campaign_X2, and changing the "PartyCreationSize" option.
