Watching LGR's video showed a sound device setting which is absent in this release. I use the Roland SoundCanvas VST for midi on my system. I'd love to be able to channel the music through there, or a Roland emulator. Is that possible?

The GOG version is the DOS CD version, not the floppy version LGR shows on his video. The CD version fixed some bugs and only has digitized audio, no MIDI. If you listen to the music in that video and compare it to GOG's version, you'll hear it has been improved.
