If I want to enjoy Mortal Kombat story-wise, should I play Mortal Kombat 1+2+3 or could I just play Mortal Kombat Trilogy?

Also, is the story only told by some text in the menus and can be read on the internet without loosing a detail or visual impression, or is it nicer to get to know the story while playing?

The story is told via the game intros and character bios, plus there are the character endings too (text and artwork). There's no story mode like you get with the more recent games.

Also Mortal Kombat Trilogy is an update of the third game, so you'd have to play Mk 1 and 2 for the story of those two games - or as you suggested just read them online.
Or you could play MK9 on Steam : the game links MK 1 2 & 3 story together in this 2011 game. You can relive the story with MK9 gameplay & graphics.
Basically MK9 was the MK revival (after SF4 was the SF revival).
If you become a MK fan, just purchase every MK minus Special Force.

Just purchased 1+2+3 as well now. I do not want to use Steam, otherwise this MK9 is an interesing fact to know.

MK9 is no longer available on Steam FYI. Those who bought it before they took it off there keep it (I know because I did) but otherwise I think GoG is the only place to get it?

They threw a bunch of papers in a box labeled "wouldn't it be cool?", shook it up, and every time they start making a new game they pick however many they want to go with.

The story is a complete mess. There was an animated movie I remember watching as a kid (RIP Blockbuster, should have bought Netflix when they made you the offer) which did a pretty good job of explaining the premise of the first game. There were two live action movies that are good in a "so bad it's good" kind of way. The movies also do a good job of explaining the premise.

I would advise watching these movies, and play MKTrilogy.
