I have worked out how to saved games using the f1 shortcut.

The saved games do not appear in the load menu.

I have located the saved games on my finder and one example of the file name is: monkey3.s00

Doe anyone know hoe to fix it so I can view and load the saved games?

F1 > Return to Launcher > Edit Game... > Paths > Save Path.
Set the right path there.

I was having the same issue. I had to add both "The Curse of Monkey Island" and the GOG launcher (Right click your installed copy of COMI > Show Package Contents > Contents > MacOS > GOGLauncher) to "Full Disk Access" under the Security & Privacy section of System Preferences. Once I did that it could read my save games.

You really shouldn't do that. Allowing apps full disk access is bad practice. The secure way is to give apps access only to the directories they need to read and write to. This is not just about malicious software and privacy, but about limiting the damage from bugs.

For me, allowing access for GalaxyCommunication to ~/Documents was enough. (Or to be precise, GalaxyCommunication already had access to ~/Documents when I installed TCoMI and all I had to do was set the correct path and it worked.)
