I recently installed M&M 8 on my macbook, but the game itself only runs in the bottom-left corner of the screen, showing that part of the game, making it totally impossible to play. I've tried fiddling with the wineskin settings, but to thusfar no avail - has anyone got any advice?

Same problem here. No solutions yet.
M&M6-8 run at 640x480 with 16-bit color; you may need to set the Wine virtual desktop to this mode (I haven't tried it with Wineskin myself). You could also try installing the GrayFace MM8 Patch to see if that runs better under Wine.

Alternately you could try switching into windowed mode (F4) to see if that gets a different result.
I wish I had more details for you, but I frankly have forgotten them. Here's what I can say, though:

- Unless you're dead set on having a "pure" experience, install the Grayface patch. It will help.
- MM8 was the most finicky for me on my MacBook running under Wineskin (compared to the other Windows based games)
- The key, for me, was getting the exact right version of Wine, and I had to go back quite a ways. The current version of Wine is 1.7, but I think I used something in the 1.3 era.
- Wine's AppDB has good results for Wine 1.3.9 and 1.3.14 (http://appdb.winehq.org/objectManager.php?sClass=version&iId=22318). I'd start there.
