I hope everyone is well.

I'm currently having this issue: Everytime I alt+tab out of the game and come back, the game looks all glitched out and stays like that until I restart the game.

I've attached a picture as well.

I have the exact same problem. If I alt-tab, the game glitches and the only way to fix it is by restarting the game. I have tried both with and without the unofficial patch. I'm not sure what to do about it.
My solution when I've had that problem is to simply not alt-tab, or else to quit out if I need to look at something outside the game. I don't know of any other fixes.
That seems to be the only possible solution right now, just not alt-tabbing. This is unfortunate, as I do a lot of note taking and such in Might and Magic, I try not to look things up online and keep track of most information myself. Admittedly, 7 does have a few more quality of life features (Like noting where master trainers are if you ask), but there's still a lot to write down and record for convenience. Having to quit each and every time I find a bit of information that may or may not be useful is going to be a bit tedious.

Oh well. I absolutely adored my time with 6, hopefully I can get past this and a few other minor issues to enjoy 7 just as much. Perhaps I may find another solution that works for me. We'll see!

Get a pencil/pen and a notebook! I still have one of my old SNES notebooks stuck in a corner somewhere, full of codes, hints, solutions, etc for different games. :D

That said, I do understand the draw of taking the notes on your computer with notepad (or whatever). I did that pretty extensively while playing Baldur's Gate.
this isn't really a solution for the issue but it will solve your issue, you can split your monitor screen into 2 and open 2 different desktops on it having might and magic on half the screen and whatever you'd alt tab for on the other half
I have tablet I use to access out of game info and programs while I'm playing.
When I ran into this issue I could fix it by hitting f4 to switch it to windowed mode and hit f4 again to put it back to fullscreen and that would fix the glitchy screen.
I'm guessing MM7 uses 256 color mode with a custom palette. Not sure how to fix it though.
You could try switching Windows to 256 color mode before starting MM7 but I doubt it would fix the problem.
Personally, I just use an Android for taking notes or looking something up for this.
