Dinked around with this game awhile back and delving further into it now.....like that it has a map....was going to try Wizardry 6 and 7, but 6 is so graphically dated and 7, with a huge open world and no mapping on either is a deal breaker for me, in this day and age...but I digress.

So, started getting used to the map in M & M 4, but the fact that it only shows a portion of it is very confusing. Not talking about the mini-map, but the one you get when you click on the small button. I see no way to scroll around in the map and it only fills part of the game screen, so you can't get your bearings.

Also, and maybe this is part of the problem, all my older DOS Box games run with the game only filling maybe 2/3 of my laptop screen? Is this normal or do I have a setting wrong? Wondering if the game filled the screen, maybe the map would show more.

To clarify, there is a large black border all around the game screen...so it's not windowed. The program is filling the screen, but the games themselves only take up a 1/2 to 2/3 of the screen. It's a 17" laptop, if that matters. Gettting a newer, smaller one, that will be 15 1/2.
MM 4 doesn't have scrolling in-game map, but it isn't really problem - mini map in upper right corner is very sufficient (as well as "big" map via M shortcut).

Earlier games had 1,(3):1 resolution, and widescreens have different scaling, so you either deal with black borders or with distorted image.

Sounds like you have black borders on not only the sides, but also the top and bottom? In that case, you probably need to enable scaling in your graphics card options. The game is trying to run at its original resolution, so it only takes up a small part in the center of your screen (since your screen has many more pixels than the game needs). With scaling, the game will be enlarged, using many pixels on your monitor to represent one game pixel. Ideally you should see black borders on the sides but not the top and bottom. This is because the original game runs at a 4:3 aspect ratio but your screen is likely a widescreen aspect ratio like 16:9. Look for an option in your graphics card settings to enable scaling but preserve aspect ratio, so the game won't end up stretched horizontally.

Another option is to play windowed but enlarge the window. You can do this easily in the DOSBox configuration file. Look in your game directory for a file named DOXBoxMM4_5.conf or something similar. Edit it in notepad or another text editor. Look for a line that says "windowresolution=original" and change it to something else, e.g. "windowresolution=1024x768". That will make the window larger so you can see the game more clearly. You can switch between fullscreen and windowed by pressing ALT+ENTER in-game, or you can find the line in the configuration file that says "fullscreen=true" and change it to "fullscreen=false" to make the game start in windowed mode automatically.
