You most definitely could. Just install the windows version with Wine, and copy the game into some more comfortable place than ".wine".

Since the game uses dosbox, all you need to do is run the game with dosbox. You can install dosbox in Ubuntu easily from the repositories.

To launch the game, you can still use the .conf file provided by GOG, however you may do changes to it to make the game feel more comfortable. I could send you mine tomorrow, when I have the time. The command used for launching is "dosbox -conf dosboxMM1.conf", provided that is the name of the config file.

You can create a launcher for this as well, for example a simple .sh file containing the above line.
