Is it possible to play only 6 mission on easy and hard mode to unlock Bronze and Silver Stars? Instead play full game again

Nope. Those medals are campaign difficulty oriented. You have to beat the game on each of those difficulties, in order to get them.

Though I believe there was a time when all of them were present at the start of the game. But I guess it was a glitch of some sort.
