So I am just digging into this game and....
Can I be a templar, inquisitor and weilder....
I'm guessing not and that I need to choose.

Anyway wondering how far I could go one way or the other without jeopordizing other options.

You're guessing right. You have to choose on of the three factions. Actually it would also make very few sense if things were different, cause if you were inquisitor and wielder you would have to help and betray the wielders at the same time.

You can begin/fulfil the first quest for each faction and have them finished at the same time. Only after the first quest you will have to decide.

To becom precise:
For the Knights Templar, the first quest is to talk to Auric in the Templar's armory and then to help Esteban securing the crossroads. After that you are sent to Javier, and only if you confirm to him that you want to be a Templar you become one.
For the Inquisition you can aid Dominguez in cleansing the Temple District from the blue mana spirits. You become an Inquisitor only after paying the initiation tithe to raphael when you finished the quest.
For the wielders, the first quest is to gather blackwood in the cave below Felipe's house. Only once you have given it to Cedric you are a wielder. If you want to become Templar it is actually very sensible to finish this quest first, because in the blackwood cave you will find one of the books for Weng Choi
