How do you open / run a .BIN file. The other games I downloaded from GOG were .EXE files.

You should have more than just a .bin file.
There are 3 files that need to be downloaded from your "My Account" page, the 2MB one, the 2GB one and the 1.1GB one; The 2MB should be a .exe, click that to run the usual Gog.com setup (It will download all 3 automatically if you are using the gog downloader).
