Installed and played for about an hour and the game runs great and had no issues, WINE Staging 6.19.

CPU: AMD Ryzen 7 2700X (16) @ 3.7GHz
GPU: AMD ATI Radeon RX 580

I have an almost identical set up to you except I'm on Fedora 34 KDE and my game runs flawlessly too. The only drawback is that the wide screen fix doesn't work with WINE ;)

Based on comments from https://www.protondb.com/app/6880 I got widescreen working with the command line switches /width=1920 /height=1080

I did this after applying the widescreen mod so I don't know whether it works on an unmodded game.

I finished the game using Bottles with no issues. A few crashes that didn't seem Wine related.
