Hi, would like to play the game in german, is that possible?

I don't think GOG or Steam support any other language but English.
What you can do is install GOG version, then buy the original German version of the game e.g. from amazon and copy the resources: Jones3D.GOB, CD1.GOB and CD2.GOB from the German pack to the <game installation folder>\Resources and replace existing files there.
This should get you the German language in the game with GOG's enhancement for the game.
