I seemed to have lost my ability to change resolutions.
A Quick search of this thread (https://steamcommunity.com/app/375440/discussions/0/1837937637886843672/) showed me to add this command line argument (you can do this in the gog launcher in settings)
-show-screen-selector
After that, you will get a selection screen on launch to set your resolution.
