I see that GoG allow to add to the libray hota, but I don't get how to install and start it, I don't have it in my galaxy library and the contextual options for Homm3 complete doesn't show anything related to mods. How does this mod function works?

Try restarting Galaxy to refresh your GOG game library. Then search for the mod in your game list. You should find it.
