I just saw the Gog.com version of HOMM1 at a friend's house, and it has the same problem I experienced when installing and running the game under dosbox from my old CD.

Essentially, the game loses a lot of its charm because all animations runs too fast. Baddies on the map look hyperactive, waves crash on the shore at an abnormal speed (this is also noticeable on the title screen), and so on and so forth.
The music also seems to run a tad too fast, I remember the tunes being more soothing.

I realize this is a dosbox issue (I tried about every combination of cpu type and fixed cycles amount, with both 0.73 and 0.74, without improvements), but maybe if GOG brings up the issue with them, maybe even give them a grant to fix the issue, they have more chance of looking into the problem?

By the way, HOMM2 has the same problem under dosbox 0.73, but they fixed it for 0.74. Might be something to keep in mind depending on the dosbox version used by the GOG version of that game.
