I remember playing the Japanese release of this, and I could quit the program any time by hitting the Esc key. With this version, I can't seem to quit it without having to bring up the Task Manager or keep it windowed. Has anyone figured out the hot key to quit it? I want to play this full-screened but can't because of the Task Manager route.

You have two options, Alt-f4, or f12. F12 being the easiest,. Just remember to put the game to auto save.
