I just recently bought Gothic 2, and I think this game has some really awkward controls, so awkward in fact that I find it a real hindrance to play and enjoy the game.
Are there any mods out there that let me have some more fluent and intuitive controls?

Awkward in what way? Movement? Interaction? Something else?

Have you tried toggling the Gothic 1 controls setting? This changes how some controls work so you might like that more.

As in most of the controls are awkward, there are no quick use key for items such as healing items, the combat is an issue where I have to push forward to attack and I have no idea how to hit with the bow and arrow.
I try to sneak, but I never enter stealth mode as it is called, and I have no idea how to do certain things when I need to, like when I should plant that letter on Sarah the Merchant.

I want to play this game, but this is really a game you need to know how to play before you play it, but then again I have that issue with most old games, like old shooters that have the controls scattered all over the keyboard.

I just want some Intuitive controls in my games, no essays to read before playing, yeah? :P

I think there was some way to enable that. Right now i can neither remember nor find it. Some ini tweak or mod or whatever. Maybe i'm confusing it with gothic 1.

so? One button to focus a target and "enter fighting mode" and 4 buttons(wsad) to choose your action. Forward, forward attack, left left attack... you know... back, parry.

Just as you'd do it in melee combat. Hold left mouse button or ctrl to focus and press forward to shoot. If you don't hit you're too far away respectively your bow skill's too low.
It's random if you hit or not but if you're too far away the chance is 0. With no expertise in ranged combat you will miss everything thats more than like 10m away.

Don't know what to tell you here if you see that crouched animation everything works as it should.

Maybe you should listen to that NPC. He should have told you to just talk to her as if you wanted to trade something. As soon as you've done that i guess you'll have an idea how to get something from your inventory into hers. ;)

A good post by stevef but unfortunately of little help, Gothic 2 is not similar to 3 in most of these aspects.

There are no hotkey slots. You can enable potion hotkeys for healing and mana potions in the ini file but they are non-remappable and not very officially supported (some F keys IIRC).

Combat is simple. You focus on an enemy, hold the action button and have 4 moves with the ASWD keys. Just as Kuchenschlachter wrote.

Bow and arrow do not work like on G3. If you focus on an enemy, just hold the action button and repeatedly press forward to shoot arrows. No possibility to aim on your own, bow skill determines whether you hit or not.

You have to learn sneaking first and there is a separate sneak button you can map in the controls menu. If you learn it and enter sneak mode you will see the hero walking a bit crouched. Also, townsfolk don't like people who sneak, it'll earn you a trashing.

Google gothic 2 sneak trainers, I don't remember who they were any more.
