Before I install the beta can I have both gog galaxy and Galaxy 2.0 installed at same time?

I would guess I can only run one of the versions at any one time, is that correct as well?

No, the beta installs over the old version. And here's the kicker: you can't revert back to an older version except through a clean install. So if you don't have an actual invite for the beta, you will be stuck with a completely unusable version unless you uninstall everything and install from scratch...

In my case I have both galaxy version installed without any apparent problem.
Maybe because I installed Galaxy 1 in a different folder not the default one?

The only thing as you said, is that I can only run one of the versions.

Edit: Yep, I confirm that both installations are in different folders

Douy you refer to the programfiles only or are they sharing the same data (directories)?

I'm not sure what it's your question (English is not my native language) but the clients are installed in different directories so I don't think they share any files.
Is that what you asked?

However they use the same game installations and for now I didn't had any problems running the games in Galaxy 1.2.57 after installing Galaxy 2 (I tried it with Blood and BioShock Infinite).

The only issue that I found is that the shorting by activity in Galaxy 1.2.57 was lost after I used Galaxy 2 for the first time.

But both of those are sharing the ProgramData\GOG.com\Galaxy -folder and its subfolders, so almost certainly something is going get broken eventually in there once GOG decides to modify their database structure for the new client or does something else that makes some of the shared files incompatible with the old client.
I know I know, I just said that it was possible and it was working (for now) but I didn't want to imply that I would recomend to do it.
