Set online status is the twelfth most voted GOG Galaxy wish of all time. It's safe to say the developers are aware of the demand.
It's a really basic feature, so I'd like to think it'll be implemented eventually for sure. But on the other hand, there's still no Linux version though it's the most voted wish.

I don't know exactly which version added this, but it's finally possible in the current 2.0.40.

Is your status remembered after restarting the application? Mine used to be, but for a long time now it's reset to Online every time I start GOG Galaxy.
