Fantastic year for games (loved all the ones mentioned), but Day of the Tentacle was my favorite by far, absolutely. I remember getting it for Christmas that year - at the time, I was running a BBS, and whenever I'd want to play a game, I'd have to take the board offline so I could use the computer. Well, I got a lot of complaints for that next 2 weeks of the BBS never being up. Just loved the art style and humor of the game. I remember showing the intro scene to all of my friends repeatedly - I got such a kick out of it.

Quest for Glory IV
Space Quest V
Day of the Tentacle
Sam n Max

are my favorites that I enjoyed in 1993 or shortly thereafter

Gabriel Knight and Simon the Sorcerer I have GOG to thank.

Some great voice acting in many of these games.

Edit: I consider 1993 the peak of adventure games, I'm not sure there was every a year before or after to equal it.
