How do I check on GOG what the system requirements are before I buy a game?

They're just above the user reviews on the game's page.
Also note that these requirements have been updated to take into account whatever emulation is required to run the games on a modern system.

They're on the game card. For example, Giants: Citizen Kabuto:
Minimum system requirements: Windows XP or Windows Vista, 1 GHz Processor (1.4 GHz recommended), 256MB RAM (512 recommended), NVidia or ATI/AMD 3D graphics card compatible with DirectX 7 (compatible with DirectX 9 recommended), Mouse, Keyboard.
Compatibility notice: Intel graphics chipsets may work with this game, but we can't guarantee full compatibility. Using a discrete graphics card is strongly recommended.
Patched to version 1.4
